Preheat the oven to 400 ° F.
In a mixing bowl, blend the flour, baking powder,and salt.
Cut the butter into small cubes. Add to the flour mixture. Using the pastry blender or a couple of butter knifes like Wolverine blades, cut the butter into the flour mixture until you have tiny pea-sized chunks of butter and flour.
In another mixing bowl, blend the mashed potatoes, milk, and eggs.
Add the wet ingredients to the dry ingredients. Mix well until you have a dry crumbly dough.
Knead the dough. If the dough is sticky, add the second quantity of flour and knead until the dough is soft and no longer sticky.
Roll the dough into a log. Cut the log into eight pieces. Turn those pieces into circles about 1 -inch in height.
Place on a baking sheet. Put on middle rack in the oven.
Bake at 400 ° F for 15 – 18 minutes or until golden brown
Remove from oven. Let cool for a bit. Best served warm with butter and jam or maple syrup.
