Disabled Kitchen Recipe: Air Fryer Potato Scones with Bonus Oven Instructions

My maternal grandmother was Scottish. Potato scones are a staple in Scottish homes and a great way to use up leftover mashed potatoes. Every time we had left over mashed potatoes, fresh-out-of-the-oven potato scones with jam or maple syrup was the dessert. My wheelchair does not allow for baking in an oven, so I had to adapt this recipe for the air fryer. You can also make a savory version by making bacon bits and adding it to the dough.

As a bonus, you can also print off the oven instructions.

Prep time is about 20 minutes. Air fry time is 16-18 minutes. If baking in the oven, time is 15-18 minutes.

Air Fryer Potato Scones

Potato Scones is a traditional Scottish dish that makes use of leftover mashed potatoes.
Servings 4 scones
Prep Time 20 minutes

Equipment

  • 8-quart air fryer
  • Mixing bowls
  • Pasty blender or a couple butter knives
  • Measuring cups and spoons
  • Trivet and bottom of a spring form pan

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tbsp butter
  • 1/2 cup mashed potatoes made with butter and milk
  • 3 tbsp milk
  • 1 large egg
  • 1 tbsp all-purpose flour for kneading

Instructions

  •  In a mixing bowl, blend the flour, baking powder,and salt.
  • Cut the butter into small cubes. Add to the flour mixture. Using the pastry blender or a couple of butter knifes like Wolverine blades, cut the butter into the flour mixture until you have tiny pea-sized chunks of butter and flour.
  • In another mixing bowl, blend the mashed potatoes, milk, and eggs.
  • Add the wet ingredients to the dry ingredients. Mix well until you have a dry crumbly dough.
  • Knead the dough. If the dough is sticky, add the second quantity of flour and knead until the dough is soft and no longer sticky.
  • Roll the dough into a log. Cut the log into four pieces. Turn those pieces into circles about 1 -inch in height.
  • If using the Instant Pot/Air Fryer combo, add the trivet to the bottom of the pot. Place the bottom of a spring form pan on top of it. Place the scones on top of it. If using a different brand of air fryer, create a similar setup in the air fryer basket.
  • Air fry at 350° F for 14 minutes. Turn over and air fry for an added 2-4 minutes, until golden brown.
  •  Remove from air fryer. Let cool for a bit. Best served warm with butter and jam or maple syrup.
