In a mixing bowl, blend the flour, baking powder,and salt.
Cut the butter into small cubes. Add to the flour mixture. Using the pastry blender or a couple of butter knifes like Wolverine blades, cut the butter into the flour mixture until you have tiny pea-sized chunks of butter and flour.
In another mixing bowl, blend the mashed potatoes, milk, and eggs.
Add the wet ingredients to the dry ingredients. Mix well until you have a dry crumbly dough.
Knead the dough. If the dough is sticky, add the second quantity of flour and knead until the dough is soft and no longer sticky.
Roll the dough into a log. Cut the log into four pieces. Turn those pieces into circles about 1 -inch in height.
If using the Instant Pot/Air Fryer combo, add the trivet to the bottom of the pot. Place the bottom of a spring form pan on top of it. Place the scones on top of it. If using a different brand of air fryer, create a similar setup in the air fryer basket.
Air fry at 350° F for 14 minutes. Turn over and air fry for an added 2-4 minutes, until golden brown.
Remove from air fryer. Let cool for a bit. Best served warm with butter and jam or maple syrup.
