1 Oven-style Air Fryer (or 8-Quart Air Fryer/Pressure Cooker Combo like the Duo Crisp or Ninja Foodi Deluxe)
Measuring cups and spoons
1 large mixing bowls (2 if you do not have a food processor)
Food processor (or pastry cutter)
Cutting Board
French rolling pin
2 x 6-inch spring formpans (or 4 x 4-inch springform pans)
Cookie cutter or jar or knife
Trivet if using a combo cooker.
Ingredients
Cherry Cobbler Filling
6cupscherries
1/2cupsugar
2tbspcornstarch
1tbsplemon zest(zest of one lemon)
Cherry Cobbler Topping
1 1/4cupsall purpose flour
1/4cupcornmeal
1tbspsugar
1/2tbspbaking powder
1/2tspsalt
1/2tspbaking soda
3/4stickunsalted butter(1/4 cup plus 2 tbsp), cold, cubed
1/2cupbuttermilkplus
2tbspbuttermilk
cornmeal for rolling
Instructions
Cherry Cobbler Filling
In a large mixing bowl combine the cherries, first amount of sugar, cornstarch, and lemon zest. Toss well. Set aside while creating the topping. NOTE: It is important to do this step first and let it sit while creating the topping so that pectin has a chance to start developing.
Air Fryer Cherry Cobbler Topping
In your food processor, add the flour, cornmeal, second amount of sugar, baking powder, salt, and baking soda. Blend for a minute until well-combined. NOTE: If you do not have a food processor, put these ingredients in a large mixing bowl and combine well.
Add the butter cubes. Using the Chop settings, blend for a minute until the mixture becomes the consistency of small peas. If your food processor doesn't have a Chop setting, pulse until the right consistency. NOTE: If you do not have a food processor, use a pastry cutter to cut in the butter until the desired consistency.
Add both quantities of buttermilk. Using the Dough setting, mix for two minutes, until thoroughly combined. If your food processor doesn't have a Dough setting, pulse until thoroughly combined. NOTE: If you do not have a food processor, use your hands to combine the dough.
Flour the cutting board with cornmeal. Put the dough on the cutting board. Using your hands or a French rolling pin, roll the dough until it is 2.5 - 3 cms thick (1 - 1.5 inches).
Using a cookie cutter, knife, or the opening of a jar, cut the dough into circles, squares, or any desired shape.
Prepare the Cobbler: 6-inch round springform pans
Add 3 cups of the filling to each pan.
Put the cut topping on top of the cherry filling in any desired pattern.
Prepare the Cobbler: 4-inch round springform pans
Add 1.5 cups of filling ot each pan.
Put the cut topping oon top of the cherry filling in any desired pattern.
Oven-Style Air Fryer
Using the Bake funtion, set the air fryer to 350 F for 18 minutes. Preheat.
When the "Add Food" food indicator goes off, add 1 springform pan to the bottom rack.
When done, remove the cherry cobbler and repeat with the other cobbler.
Let the cherry cobblers sit at room temperature for at least one hour before serving to allow the cherries to set.
Air Fryer/Pressure Cooker Combo
Put the trivet in the bottom of the inner pot. Put two of the springform pans on top of the trivet.
Place the lid. Using the Bake function, set to 350 F for 20 minutes.
When done, remove the cherry cobblers and repeat with the other cobblers.
Let the cherry cobblers sit at room temperature for at least one hour before serving to allow the cherries to set.
Notes
Freeze any leftover cherry cobbler or eat within three days.
