Oven Potato Scones

Potato Scones is a traditional Scottish dish that makes use of leftover mashed potatoes.

  • Measuring cups and spoons

  • 2 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 3 tbsp butter
  • 1 cup mashed potatoes made with butter and milk
  • 1/3 cup milk
  • 1 large egg
  • 1 tbsp all-purpose flour for kneading


  •  Preheat the oven to 400 ° F.
  •  In a mixing bowl, blend the flour, baking powder,and salt.
  • Cut the butter into small cubes. Add to the flour mixture. Using the pastry blender or a couple of butter knifes like Wolverine blades, cut the butter into the flour mixture until you have tiny pea-sized chunks of butter and flour.
  • In another mixing bowl, blend the mashed potatoes, milk, and eggs.
  • Add the wet ingredients to the dry ingredients. Mix well until you have a dry crumbly dough.
  • Knead the dough. If the dough is sticky, add the second quantity of flour and knead until the dough is soft and no longer sticky.
  • Roll the dough into a log. Cut the log into eight pieces. Turn those pieces into circles about 1 -inch in height.
  • Place on a baking sheet. Put on middle rack in the oven.
  • Bake at 400 ° F for 15 – 18 minutes or until golden brown
  •  Remove from oven. Let cool for a bit. Best served warm with butter and jam or maple syrup.
