Instant Pot Middle Eastern-Inspired Rice Bowl: Disasabled Kitchen Recipe

My Instant Pot Middle Eastern-Inspired Rice Bowl is quick and relatively easy to make. Rice bowls are common throughout the Middle East. Rice bowls may seem simple but the way tangy, sour, and sweet are combined in Middle Eastern cuisine causes an explosion of flavour in your mouth. Also, they are great balanced meal in one bowl.

You don’t need a lot of equipment to make this Middle Eastern rice bowl. You only need the following:

  • 3-quart Instant Pot
  • Tongs
  • Cutting Board
  • Chef’s Knife
  • Measuring cups and spoons
  • Fine Mesh Strainer
  • 3 Small stainless-steel Mixing Bowl
  • Aluminium foil
  • Trivet
  • Non-stick flat pan or frying pan

Instant Pot Middle Eastern-Inspired Rice Bowl

A delicious, healthy, and filling rice bowl for lunch or dinner.

Equipment

  • 3-quart Instant Pot
  • Tongs
  • Cutting Board
  • Chef’s Knife
  • Measuring cups and spoons
  • Fine Mesh Strainer
  • 3 Small stainless-steel Mixing Bowl
  • Aluminium foil
  • Trivet
  • Non-stick Flat pan or frying pan

Ingredients

  • 1 red onion thinly sliced sliced
  • 4 tbsp red wine vinegar divided
  • 2 tsp sugar
  • 1 1/2 Cups Basmati Rice rinsed
  • 1 1/2 cup water
  • 1 tsp ghee
  • 1 tsp sea salt
  • 400 g halloumi cheese rinsed, dried, and sliced into 1/2 cm slices
  • 2 tbsp harissa paste
  • 1 dash cayenne pepper to taste if you do not find harissa paste spicy enough
  • 2 avocados cut into bite-sized pieces
  • 1/2 cup hummus
  • 1 tsp minced garlic
  • 4 tbsp mayonnaise
  • 1/2 cup carrots julienned
  • 1 cup red cabbage shredded

Instructions

  • In a small Instant Pot-safe mixing bowl, add the onion, 2 tbsp of vinegar, and sugar. Cover with aluminium foil. Set aside.
  • In the Instant Pot, add the rice, water, salt, and ghee. Place the trivet on top of the rice. Place the bowl with the onions on top of the trivet.
  • Place the lid. Cook at High Pressure for 4 minutes. Natural release for 10 minutes.
  • While the rice is cooking, preheat the non-stick pan. Once hot, fry the cheese until golden brown on each side. About 1 – 2 minutes per side.
  • Place the cheese in a bowl. Toss with the harissa paste. Add cayenne pepper to taste if you wish. Set aside.
  • In a mixing bowl, whisk together the hummus, mayonnaise, 2 tbsp of vinegar, and garlic. Set aside.
  • Toss the cabbage with 1 tbsp of the hummus sauce.
  • Once the rice and pickled onions are done, divide the rice between serving dishes. Top with divided carrots, avocado, cabbage, pickled onions and drizzle with the hummus sauce. Enjoy!
