You don’t need a lot of equipment to make this Middle Eastern rice bowl. You only need the following:
- 3-quart Instant Pot
- Tongs
- Cutting Board
- Chef’s Knife
- Measuring cups and spoons
- Fine Mesh Strainer
- 3 Small stainless-steel Mixing Bowl
- Aluminium foil
- Trivet
- Non-stick flat pan or frying pan

Instant Pot Middle Eastern-Inspired Rice Bowl
A delicious, healthy, and filling rice bowl for lunch or dinner.
Equipment
- 3-quart Instant Pot
- Tongs
- Cutting Board
- Chef’s Knife
- Measuring cups and spoons
- Fine Mesh Strainer
- 3 Small stainless-steel Mixing Bowl
- Aluminium foil
- Trivet
- Non-stick Flat pan or frying pan
Ingredients
- 1 red onion thinly sliced sliced
- 4 tbsp red wine vinegar divided
- 2 tsp sugar
- 1 1/2 Cups Basmati Rice rinsed
- 1 1/2 cup water
- 1 tsp ghee
- 1 tsp sea salt
- 400 g halloumi cheese rinsed, dried, and sliced into 1/2 cm slices
- 2 tbsp harissa paste
- 1 dash cayenne pepper to taste if you do not find harissa paste spicy enough
- 2 avocados cut into bite-sized pieces
- 1/2 cup hummus
- 1 tsp minced garlic
- 4 tbsp mayonnaise
- 1/2 cup carrots julienned
- 1 cup red cabbage shredded
Instructions
- In a small Instant Pot-safe mixing bowl, add the onion, 2 tbsp of vinegar, and sugar. Cover with aluminium foil. Set aside.
- In the Instant Pot, add the rice, water, salt, and ghee. Place the trivet on top of the rice. Place the bowl with the onions on top of the trivet.
- Place the lid. Cook at High Pressure for 4 minutes. Natural release for 10 minutes.
- While the rice is cooking, preheat the non-stick pan. Once hot, fry the cheese until golden brown on each side. About 1 – 2 minutes per side.
- Place the cheese in a bowl. Toss with the harissa paste. Add cayenne pepper to taste if you wish. Set aside.
- In a mixing bowl, whisk together the hummus, mayonnaise, 2 tbsp of vinegar, and garlic. Set aside.
- Toss the cabbage with 1 tbsp of the hummus sauce.
- Once the rice and pickled onions are done, divide the rice between serving dishes. Top with divided carrots, avocado, cabbage, pickled onions and drizzle with the hummus sauce. Enjoy!
